Brown Butter Bacon Chocolate Chip Cookies

Something epic just happened in my kitchen. Cookie magic, if you will.

Curiously, I also found a way to make dessert NOT vegetarian.

I appologize to all you lovely vegetarian folks in advance for defiling the usually innocent chocolate chop cookie.

I made brown butter bacon chocolate chip cookies and basically each bite was life affirming, as if I had been placed on this little planet just so this very thing could happen.

Exaggeration… maybe? You take a bite and decide.

Well I had to try this since making my simply amazing brown butter chocolate chip cookies. I had kept this on the back burner and when I was in the mood to bake some cookies I finally did it.

COOKIE MAGIC I tell you!

Oh and the other day my husband said he was over bacon… and I get it, bacon is almost like a little subculture. Like people that are obsessed with zombies.

And yeah bacon is put into LOTS of things, almost anything.

The most over the top variation on the chocolate chip cookie, brown butter and bacon chocolate chip cookies! Delightfully and irresistibly sinful!

Ingredients
  1. 2 cups all purpose flour
  2. 1/2 teaspoon baking soda
  3. 1/2 teaspoon salt
  4. 3/4 cup unsalted butter, melted, browned
  5. 1/2 cup packed light brown sugar
  6. 1/2 cup packed dark brown sugar
  7. 1/2 cup turbinado sugar
  8. 1 tablespoon vanilla
  9. 1 egg, room temperature
  10. 1 egg yolk, room temperature
  11. 1 cup semisweet chocolate chips
  12. 3 strips of bacon baked crisp, broken into pieces
Instructions
  1. Preheat oven to 325 degrees. Line 2 cookies sheets with parchment paper.
  2. Sift together the dry ingredients or just spoon the flour into measuring cup
  3. Melt and brown the butter in a stainless steel saucepan on low-medium heat, stirring constantly. Once you start to see bit of brown on the bottom of the saucepan remove from heat.
  4. In the bowl of an electric mixer; cream together the melted butter, light brown sugar, dark brown sugar and turbinado sugar until well incorporated. It should be smooth in texture and not as grainy looking. This should take 3-5 minutes.
  5. Beat in the egg, egg yolk and vanilla till light in color and creamy looking. This will take about 3-5 minutes.
  6. Spoon in the sifted dry ingredients into the batter until just incorporated on low.
  7. Fold the chocolate chips and bacon pieces into the batter.
  8. Roll the dough into a ball with your hands and place on the parchment lined cookie sheet 3 inches apart. Bake 15 -17 minutes until edges are brown.
  9. Remove cookie sheet from the oven and transfer cookies parchment paper and all onto a cooling rack to cool with cookies on it about 10 minutes. The cookies will VERY soft and delicate so keeping the cookies on the parchment and transferring to a wire rack is your best bet to keep them in tact!

  1. I bake my bacon in the oven for perfectly crisp bacon. To brown butter there are several tutorials, I posted one above.
