IPA Pickles #BeerMonth

Everyone loves some pickles, well now you can make your own at home and make them even better with beer and garlic!!

 

This post is not just in celebration of #BeerMonth but also #NationalGarlicDay and this recipe definitely celebrates both!

Calling all garlic lovers! Welcome to National Garlic Day 2015, hosted by Heather from girlichef. April 19th is a day for garlic lovers far and wide to come together and celebrate the wonder of “the stinking rose”. Whether it’s the ability to ward off vampires (and bugs), its numerous health benefits, or the way it lends flavor to a dish, there are so many reasons for singing the praises of garlic.

Garlic is to pickles and peanut butter is to jelly! How can you have a pickle with no garlic? That is like a beer without hops…
Speaking of hops- I hopped up these pickles not just with hoppy IPA beer, but with some actual hop flowers! OMGeee!
I’m sure you’ve seen some of Brooklyn’s Beer Pickles. Well I was inspired by these to make my own recipe. When you see how simple it is you’ll be making them too!

What you need

7 Cucumbers
Ball Jars or any jar
1. 5 cups rice vinegar
.5 cup red wine vinegar
2 cups water
2 tablespoons kosher salt
3 tablespoons hops citrus syrup (optional)
1 tablespoon black peppercorns
1 tablespoon mustard seeds
1/2 tablespoon red pepper flakes
6 garlic cloves
1 red onion (small)
1 teaspoon caraway seeds
5 hop flowers
1 bottle Dogfish Head 60 min IPA, or IPA of your choice

 

How to make it

Note: I didn’t really jar these the proper way and seal them- just put them in the jars when liquid was hot and they seemed to seal on their own.
1- Cut up your cucumbers
2- Prepare jars
3- Take all ingredients besides cucumbers, beer and hops and bring to a boil.
4- Once boiling add hops and boil for 2 mins.
5- Remove from heat and add beer.
6- Place cut cucumbers in jars and add enough of the pickling mixture to submerge all the cucumbers in each jar.
7- I let mine sit for a week in the fridge and then digged in!
