Easy Bacon and Caramelized Onion Puff Pastry Pizza #lazygirlnye

This is the easiest and most delicious appetizer you can make! All you need is a sheet of puff pastry, onions, olive oil and bacon. You may want to make two since everyone will want seconds (and maybe thirds)!

Being that Christmas (aka: the baking and cooking Olympic Winter Games) just passed, you may want a break from all labor intensive cooking and baking. Like really, the day after Christmas I was legit sore from cooking and baking for days. SORE from cooking!! Like this is now a thing…

So I am here to make New Year’s Eve entertaining quick, easy, delicious!

Yay! It’s all part of my new installment: The Lazy Girl’s Guide to New Year’s Eve Entertainment. That is right. It’s okay to be lazy sometimes!

So I created a couple of very easy appetizers you can make for your own party or bring to a friend’s party.

Today I have for you this super decadent Bacon and Caramelized Onion Puff Pasty Pizza. So sooo soooooooooo good. Did I say fucking delicous?!

Well there you go. I cannot even implore to you how this needs to go into your damn mouth NOW!

It’s easy, quick and has very few ingredients. In short, you have no excuses!!

How the hell does one go wrong with puff pastry, bacon and caramelized onions?!

What you need

1 tablespoon EVOO
1/2 large sweet onion, sliced
1/2 large red onion, sliced
4 slices thick cut bacon, cubed 
1 sheet of puff pastry dough
3/4 cup shredded swiss and greyere cheese blend

 

 

 

How to make it

Preheat oven to 400ยบ
1- In a skillet, pour in your olive oil and put on medium heat.
2- Once the skillet and oil are heated add in your sliced onions. Saute for about 10-15 minutes, until they look like the above.
3- Put cubed bacon in the microwave for about 2-2.5 mins.
4- Arrange puff pastry dough on a cookie sheet or a stoneware pan (I used the latter). Place on cheese onions and bacon.
5- Bake 20-25 mins or until puff pastry edges are golden brown.
